Thoughts on cleaning products.
I was just watching a commercial for papertowels and like always, I'm looking for the low impact alternative in my head. First I go to use a towel which is great, re-usable and simple. But you have to wash it and though washing a towel uses a lot less water than it takes to create paper towels, it's still water. And then I thought, hang on, here's something: be careful. Slow down.
See, as a chef in a busy kitchen, you can always tell who's taken the time for mise en place (prepping your station with product for cooking) and who hasn't. Who's aware of sanitation and who isn't. The prepared chef has a station that is orderly, clean and productive. Their food looks appealing and neatly prepared.
I think if you want to control mess in your kitchen then you have to slow down, prepare, take your time, give yourself space. When you do this? You don't need as many napkins, paper or otherwise. Free yourself from the false impression that your messes don't matter cause there's always paper towels, always simple ways to clean.
It's a wasteful kind of thinking, that mess doesn't matter. It does matter. You'll have better food, waste less in the process, both of food and cleaning products, and slowing down is good for your soul.
Eat well. Eat right.

Also, repurposing is awesome. I may have to post about that soon.
