Since so many people are interested in this picnic bread and want to know how it is made here is the recipe.
Dough:
3 dl warm water
1 scht dried yeast or 25 gm fresh yeast
1 litre of flour
Mix and kneed the dough and let rise to double the size.
Filling:
50 gm sundried tomato
200 gm gruyere
100 gm mozzarella
1/2 tsp lemon zest
1 clove garlic chopped
handful of fresh parsley
Chop cheese into cubes and mix with the other ingredients.
Topping:
8 eggs
100 gr black olives
500 gr Kielbasa or smoked sausage
1 egg yolk with 2 tsp of water for glaze.
Preperation:
When dough has finished rising pinch off 1/3 and hold in reserve. Roll out the large 2/3 of the dough into a circle about 14" approx 35 cm and in the centre make a pile with the cheese mix, and rool out some of the reseve dough to form a circle and place it over the mound of cheese.
Seal it in place by dipping your finger in the egg glaze and glue the joint firmly together. Place the eggs and sausages around the perimeter and fix in place with small strips of dough, gluing firmly down with the egg glaze. Decorate the top with olives and sundried tomatoes.
Once decorated let the bread rise for a further 30 min, then bake at 180 C or 375 F ( the eggs will hard- cook in the process ) for a further 30 mins. When baked let it cool to nearly room temperature and rip it appart and eat it with your fingers.
