Steak, Black Bean and Corn Chili

Hey, it's Sunday, time for Chili.
NGREDIENTS
* 3 pounds boneless beef chuck roast - cut into 1 inch cubes
* 2 tablespoons olive oil
* 3 cloves garlic, minced
* 3 tablespoons chili powder
* 2 teaspoons ground cumin
* 3 tablespoons all-purpose flour
* 1 tablespoon dried oregano
* 2 (14 ounce) cans beef broth, divided
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper

DIRECTIONS
1. Heat the oil in a large skillet over medium high heat. Saute the beef cubes in the oil for 2 minutes. Reduce heat to medium and stir in the garlic.
2. In a small bowl, combine the chili powder, cumin and flour. Sprinkle over the meat and stir until evenly coated. Crumble the oregano over the meat and pour in 30 oz of beef stock, unsalted.
3. Add the salt and ground black pepper, stir together well, bring to a boil, reduce heat to low and let simmer, partially covered for about 2 hours. Use stock to thin and simmer 30 minutes more, until meat begins to fall apart. Cool, cover and refrigerate to allow the flavors to blend.
4. You can add some cornmeal to thicken it if you need to.
I'm serving this with some polenta which I chilled in a flat pan, cut into strips and fried until crunchy.
Some green salad, Dos XX's and some quite time this evening.

Isn't it? I was very late coming into the fandom and then wanted to kick myself for being so stubborn about watching the show. sigh
I love falling in love with a fandom. Romance without the bother. (Coz I'm lazy that way.)

But yesterday I was wanting to watch something while I was cleaning and getting ready for the week so I put in DS S3 which I have never seen all the way through. It's just marvelous. Everything thing about it. Paul Gross is fantastic, the pace is intelligent and respectful, everything in it's own time. The music and cinematography is lovely. KKR. I mean, what more do you need really?
Yeah, I hear ya on the Romance thing. Truly, truly.

I can think of so many recipes that go with DS. Not to mention all of Fraser's crazy cooking ideas.
